What is souvlaki?
Souvlaki is made with grilled chicken, pork, beef or lamb that is marinated with lemon, herbs and garlic. The Greek translation of souvlaki is “skewer”, which is why it is often served on a skewer. But you will also find it in warm pita or salads.
Ingredients for Chicken Souvlaki
It is amazing how something so delicious is only made with just a few ingredients.
- Boneless chicken breast – You can also use boneless skinless chicken thighs.
- Olive oil – I prefer to use extra virgin olive oil that is full of flavor and great to grill with.
- Lemon – a squeeze of lemon will give that Mediterranean flavor and will make your chicken juicy and tender!
- Dried oregano – It wouldn’t be a Greek recipe without oregano!
- Garlic – I recommend using fresh minced garlic cloves over ground garlic.
- Salt & Pepper – I use 1/2 tsp of salt and 1/2 tsp of pepper, but feel free to add in by your taste!

How long do you need to marinate Chicken Souvlaki?
It depends on the time you will have. When you don’t have the time, simply marinating the chicken for 30 minutes before cooking are enough to soak up all the flavors.
If you have some more time, you can marinate the chicken for 2 to 6 hours. Make sure to cover the bowl with chicken and let it set it in the fridge.
Best skewers to use
While booth wood and metal skewers works fine, I prefer the metal once. The metal skewers can be re-used and they don’t need to be soaked in water before using them.
